We only use leg of pork for dicing. This is because it is the leanest part of the pig; nobody wants a lump of fat. Instead, you are getting the finest cubes of lean, tender, free-range pork.
The farmer specially selects our own gilt pigs; understanding our requirements. They are allowed to roam free and grow naturally, living stress free lives. Keeping their lives stress free means they live a happy life, which really shows in the meat; allowing the meat to relax. Happy pig, happy butcher and happy customer. It’s really not that bad pigging out after all!
