Rump is our personal favourite as butchers. We love rump because of its great flavour, value for money and cooked well, it can best any steak! Try pan frying on a low heat until browned off. Then place in the oven on a very low heat to let the muscles relax and juices flow.
Loin is favoured for its leanness and subtle flavour. Pork steaks are exceptionally easy to cook. Even the fussiest eaters cannot complain about a nice, tender, juicy pork loin steak. The are rindless and boneless.

Out of a selection of freshly cut sirloins we choose what we believe will be the most tender and flavoursome. We then dry-age the sirloin for the respected 21-28 days to ensure the best taste.

Our fillet of beef is the prize- cut. It is deserving of this name for its extreme tenderness and leanness. Because it is so lean, fillet offers little in flavour compared to other steaks such as rump. To avoid this minor issue, we leave our fillet attached to the loin and rump; leaving it to dry age. This captures and locks the flavours off the bones into our champion fillet.
